Protein Packed Waffles

Ingredients for Protein Packed Waffles:

1 1/3 cups steel-cut oats
1/3 cup cottage cheese
4 eggs
1 teaspoon vanilla extract (pure)
2 teaspoons olive oil
1 teaspoon baking powder
1 scoop or packet Vanilla Shakeology
1 cup water

Instructions for Protein Packed Waffles:

Mix all in a blender and be sure that steel cut oats are blended well.  Heat and spray the waffle iron (coconut oil).  Pour batter on and cook!  Enjoy.  Waffles can be frozen for future use.  ***Recipe inspired by SALT to HONEY cookbook by Salt Lake City, Inc.
