Slow Cooker Kale Lentils Soup

Crock Pot Vegetable Lentil Soup-2
Ingredients:
1  16oz. bag brown lentils
8  cups vegetable stock
1  15.5oz. fire roasted diced tomatoes
2  medium white potatoes, diced
2  large carrots, sliced
1  stalk celery, sliced
1  large onion, diced
½ teaspoon salt
¼ teaspoon pepper
2 cups fresh kale, chopped
1 bay leaf
Rinse lentils in cold water until water runs clear
Chop all vegetables
Sautee onions and celery for a few minutes on stove top.  Add all other ingredients except kale.  Cook on high for 4 hours or low for 7 hours.  Add kale 10 minutes before serving.  Enjoy!
